Gluten free authentic Italian: Sugo Bistro

Italian food lovers in North Scottsdale have a new bistro in the neighborhood. Sugo Bistro occupies the ground floor in SOHO Scottsdale, a live-and-work loft community just north of WestWorld.

The Italian scratch kitchen, created by Arizona chef Robert Conneway, opened at the end of April in Scottsdale. Sugo means “sauce” in Italian, and the menu features a variety of handmade pasta, wood-fired pizzas and bruschetta boards. Because authenticity is important to Chef Conneway, nearly half of the ingredients used in the kitchen are imported from Italy.  

The appetizer menu features several Italian specialties like zesty firewood meatballs, whipped burrata with a tomato salsa crudo and garlic-parmesan fried zeppole, which are chewy deep-fried dough fritters.

Salads at Sugo Bistro are large and shareable. The Tuscan Chop is brimming with kale, cucumber, crispy chickpeas and an herb vinaigrette, while the Sugo Antipasto has Italian cured meats, pepperoncini, Grana Padano cheese and a special housemade vinaigrette.

The pizzas are a highlight of the menu with a wood fire baking the hand-tossed crust to bubbly perfection. Diners can order the Bianco Romano with three cheeses, lemon zest and arugula or the Sausage Parma Rosa with homemade sausage, charred broccolini and honey ricotta. For those who are gluten free or trying to cut carbs, the real star is the homemade cauliflower crust. It is thick and fluffy and so much better than any other cauliflower crust on the market. The chefs will also clean the oven and utensils before creating a pizza for those with Celiac disease or who are gluten intolerant.

Chicken Marsala with whipped potatoes and marsala sauce and Short Rib Brasato with wild mushroom risotto join a delicious array of handmade pasta dishes on the entree menu.

Complementing the culinary delights, Sugo Bistro boasts an extensive beverage collection including handcrafted cocktails, curated wines and refreshing non-alcoholic options.
